Chili

  1. Sweat chopped onions, peppers and garlic. Combine beans (optional), diced tomatoes and tomato sauce. Cook over medium-high heat until it begins to boil, then reduce to lowest heat and simmer. Add sweated vegetables and chili seasoning. Brown kielbasa or Italian sausage, cut into 1-inch cubes, then add to chili. Deglaze saute pan and add to chili. Add marinated, browned beef tips with sauce (reference other recipe). Simmer over low heat for 1 hour. Add salt and pepper to taste. If necessary, thicken with cornstarch.
