Braised Country Style Pork Ribs
- Package of Country Style Ribs Bone in or out doesm't matter
- KOSHER SALT
- FRESH GROUND PEPPER
- 3 T VEGETABLE OIL
- 1 PACKAGE OF CARROTS CHOPPED
- 1 STALK OF CELERY CHOPPED
- 1 ONION CHOPPED
- 3T MINCED GARLIC
- 3T TOMATO PASTE
- 1/4 C APPLE CIDER VINEGAR
- 1/2 tsp red pepper flakes
- 2 bay leaves
- 2.5 C chicken broth
- pre-heat over to 350*
- pat ribs dry and sprinkle with salt and pepper
- heat 2T vegetable oil in dutch oven and brown ribs on all sides over medium high heat
- remove meat
- add remaining 1 T oil to dutch oven and reduce heat to medium add carrots, celery, and onion, salt and pepper cook about 5 min until veggies are soft. Add garlic cook till fragrent about 1 min, add tomatoe paste to remove raw taste stirring about 3min, then add apple cider vinegar to deglaze, finally adding red pepper flakes and bay leaves .
- Add meat back to dutch oven and add 2.5c of chicken broth, bring pan to a simmer the cover and place in oven
- Cook for about 1.5 hours, however remove lid during last 30 minutes of cooking
