Gluten Free White Bread (Bread Machine)
- 3 eggs, large
- 1 t. cider vinegar
- 1/4 c. canola oil
- 1 1/2 c. water
- 2 c. white rice flour
- 1/2 c. potato starch
- 1/2 c. tapioca flour
- 1/3 c. cornstarch
- 1 T. xanthan gum
- 3 T. sugar
- 1 1/2 t. salt
- 1 T. egg replacer, optional
- 2/3 c. milk powder (non-fat dry)
- 2 1/4 t. active dry yeast
- Combine liquid ingredients and pour carefully into bread machine baking pan. Mix together dry ingredients and add to baking pan. Carefully set pan in breadmaker. Select normal/white cycle and start machine. After mixing cycle begins, help any unmixed ingredientsinto the dough with a rubber spatula, keeping to edges and top of batter to prevent interference with the paddles. Remove pan from the machine when bake cycle is complete. Invert pan and shake gently to remove bread. Cool upright on a rack before slicing.
