All-American Ham And Macaroni Salad
- 1 cup wagon wheel pasta
- 1.5 cups (8 oz) cooke ham, cubed
- 4 oz monterey jack / cheddar cheese, cubed
- 1 cup frozen peas
- 1 stalk celery, thinly sliced
- 0.25 cup onion, finely chopped
- 2 tbsp diced pimiento
- 0.5 cup mayo
- 0.25 cup sweet pickle relish
- 1-2 tbsp milk (optional)
- Dash pepper
- 8 cherry tomatoes
- Fresh parsley sprig (optional)
- * Cook pasta; drain; rinse with cold water; drain again
- * In large bowl, combine pasta, ham, cheese, celery, onion, and pimento
- * In small bowl, stir mayo, relish, pickle, milk, and pepper.
