Turkey Meat Loaf
- 2 tsp olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 3 mushrooms, chopped
- 2 garlic cloves, minced
- 1 gr onion, sliced
- 1/4 tsp thyme
- s & p
- 2 T chopped parley
- 2/3 C drained, canned tomatoes
- w/2 T juices reserved
- 1 T balsamic vinegar
- 1 T brown sugar
- dash tabasco
- 1/2 C breadcrumbs
- 1 egg, beaten to blend
- 1 1/2 lbs. ground turkey
- Heat 1 1/4 tsp oil. Add veggies & thyme, season w/s&p. Saute 6 mins. Transfer to bowl, add parsley, cool slightly.
- Preheat oven to 375. Combine tomatoes & 2T juic, vinegar, sugar & tabasco in large bowl. Mash w/fork, finely breaking up tomatoes. Lightly mix in bread crumbs & egg, then turkey. Gently stir in veggies.
- Put in nonstick or lightly oiled loaf pafn. Brush w/evoo. Bake 1 hour - til loaf shrinks from sides.
- Spoon juices off & reserve. Cool 10 mins. Cut into thick slices. Spoon juices over each portion
