Chile Crabs
- 10 fresh thai red chiles, stemmed
- 9 large garkiccloves
- 1/2 redpepper chopped
- 1/3 cup ketchup
- 1.5 T sugar
- 1 tsp salted bean paste or red miso
- 1 tsp fresh lime juice
- 8 8-oz fresh blue crabs, rinsed and aprons removed (small piece of shell, a pointed flap)
- 2 scallions chopped
- cilantro
- 1. Combine first 3 ingredients in food processor and grind finely. Add ketchup sugar bean paste, juice. Place cabs in large bowl. top with 1/2 of chile mixture. Toss to combine. Set rest of chile mixture aside. refirgerate for 1 hour.
- 2. Preheat gril lto med high.
- Remove crabs fro mmarinade and arrange shell side up on grill. grill 21 minutes or until shells turn red.Serve with remaining sauce, scallions and cilantro.
