Chicken Cauliflower Pizza

  1. Preheat oven to 450F
  2. 1. Cook cauliflower rice for 10 minutes until soft
  3. 2. Drain well, cool and transfer to a tea towel
  4. 3. Squeeze out as much water as possible
  5. 4. In a bowl, combine the cauliflower and remaining ingredients
  6. 5. Spread out and press down onto a parchment paper lined pan to 1/2-3/4 thickness - approx. 10" round
  7. 6. Bake for 20 minutes or until golden brown
  8. 7. Meanwhile saute onions and chicken in butter until cooked
  9. 8. Add the hot sauce and simmer while crust cooks
  10. 9. Remove crust from oven & top with a thin layer of tomato paste
  11. 10. Top with mozzarella, chicken including sauce, onions, crumbled blue cheese & bacon pieces
  12. 11. Return pizza to oven and bake another 10 minutes - you can broil for an additional few minutes
