Mom'S Pumpkin Apple Streusel Muffins
- 2.5 c flour
- 1/2 c oil
- 2 c sugar
- 2 eggs lightly beaten
- 1 T pumpkin pie spice
- 1 c pumpkin
- 1 t baking soda
- 2 c peeled finely chopped apples
- 1/2 t salt
- Streusel topping
- 4 T flour
- 1/2 c sugar
- 1 T cinnamon
- 8 t butter
- In large bowl, combine the first five (dry) ingredients, set aside. In medium bowl, combine eggs, pumpkin, and oil. Add liquid ingredients to dry ingredients; stir just until moistened. Stir in apples Spoon batter into greased or paper lined muffins cups filling 3/4 full. Sprinkle Streusel Topping over batter. Bake in preheated oven 350 F for 35-40 minutes or until toothpick comes out clean.
- Streusel Topping: In small bowl, combine 4 T flour, 1/2 c sugar and 1 t cinnamon. Cut in 8 t butter, until mixture is crumbly.
