Great Salsa
- 2 T salt
- 2 T sugar
- juice of 1 lime
- 1 16 oz can diced tomatoes
- 1 16oz can pureed tomatoes
- 4 jalapenos, deveined, seeded and sliced
- 4 serrano chiles, deveined, seeded and diced
- 2 anaheim chiles, deveined, seeded and diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 8 roma tomatoes, diced
- 1 red onion, diced
- 1 yellow onion, diced
- 1 white onion, diced
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 3 cloves garlic, minced
- 1 bunch cilantro, chopped
- hot sauce to taste.
- In a large bowl, add all ingredients except cilantro and hot sauce and gently toss to combine. Chill approximately 2 hours. when ready to serve, add cilantro. Add hot sauce and salt to taste. Chill for 15 minutes and serve.
