Pesto Chicken Wings
- 2-4 lbs chicken wings (aim for 1 lb per person)
- 2-4 tbsp fresh pesto - roughly 1 tbsp per lb (Golda's is a brand I like since they use Extra Virgin Olive Oil)
- Veggies of your choice (to be steamed)
- Preheat oven on high broil.
- Arrange chicken on a large cookie sheet. I use parchment paper so the meat doesn't stick to the metal.
- Place in oven for 16-18 min.
- Remove from oven, drain excess fat, flip all wings.
- Place back in the oven for 16-18 min.
- Remove from oven, drain excess fat, flip all wings
- Place back in the oven for 13-15 min (keep an eye this time as the skin may start to burn near the end).
- Remove from oven and put the wings in a large mixing bowl.
- Add the pesto and mix well to coat.
- Serve with your favourite steamed veggies (eg. Carrots, broccoli, cauliflower, snap peas, etc.).
