Fig Pork Tenderloin Salad
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 12 fresh California Brown Turkey Figs, quartered
- Spring Mix
- Raspberries
- oranges (Sweeties, in sections)
- Fennel shaved paper thin
- red onion, thinly sliced
- extra virgin olive oil
- salt, pepper
- fresh lemon juice
- pork tenderloin, prepared as in Island Pork Tenderloin salad
- For figs, mix sugars and season each fig piece
- Roast figs at 400 for ten minutes
- Toss greens with olive oil and season with salt & Pepper and finish with lemon juice
- Put salad on plates; add raspberries, oranges, fennel, onion
- Slice pork and add to salad
