Favorite Salad-Caesar
- romaine (use only this)
- 4 Tbsp. olive oil
- 2 cloves fresh garlic, crushed in the olive oil
- 1 tin anchovies
- 1/2 tsp. prepared mustard
- 1 tsp. Worcestershire sauce
- 2 coddled eggs
- juice from 1 lemon
- toasted croutons
- Parmesan cheese
- In a very large wooden salad bowl, pour olive oil.
- Crush cloves of fresh garlic with back of spoon in the olive oil.
- Mash anchovies with the garlic and oil, prepared mustard and Worcestershire sauce.
- Break coddled eggs (boil water; turn off and then set eggs in it for 1 minute.) into mixture in bowl and beat with whisk.
- Add juice from lemon and beat again.
- When ready to serve, throw in the romaine.
- Sprinkle toasted croutons and Parmesan cheese over the lettuce and toss well.
