Gratin Of Potatos And Artichokes
- 3 medium potatoes, peeled and thinly sliceid
- 1 onion, chopped
- 1 large jar of artichoke hearts, rinsed and chopped
- 1 pkg proscuitto, diced (8 to 10 slices)
- 1/2 cup shredded Asiaago
- 1/2 cup shredded Parmesan Reggiano
- salt, pepper, butter, olive oil
- Saute oniono in 2 tsp butter and 2 tsp olive oil over medium heat, until translucent. Add Prosciutto for 2 to 3 minutes. Turn off head and mix in potatoes, artichokes, salt and pepper.
- Put mixture in overproof casserole and dot with butter. Place in preheated over at 400 degreees for 15 minutes. Remove casserole from oven and mix carefully - Return to oven for an additional 15 minutes. Remove casserole again and top with shredded cheese. Return to oven until cheese forms a crust, about 5 minutes. Let casserole rest for two minutes before serving.
