Quarterback- Sneak Quiche

  1. Saute` mushrooms in 3 tablespoons melted butter in a
  2. medium skillet until tender.
  3. Add cracker crumbs and stir well. Cool a bit. Press mixture evenly on bottom and up the sides of a glass 10"
  4. pie plate.
  5. Saute` sliced or minced green
  6. onions in 2 Tablespoons butter
  7. in same skillet - sprinkle on
  8. mushroom/cracker crust.
  9. Sprinkle shredded cheese over
  10. green onions. Set aside.
  11. Combine cottage cheese,eggs,
  12. and pepper, stir well. pour
  13. over shredded cheese. Add
  14. sliced green and gold squashes
  15. and sprinkle with paprika.
  16. Bake, uncovered, in a 350' preheated oven for 30-40 minutes or until set and lightly browned. Let stand a few minutes before cutting into wedges. Refrigerate any
  17. leftovers if there ARE any.
  18. Yield: 10 quiche
