Ginger Cran-Apple Cheesecake
- 2 cups gingerbread graham cracker crumbs
- 2 tablespoons melted butter
- 1/3 cup sugar
- 12 ounces fresh cranberries
- 2 tablespoons fresh chopped ginger root
- 1 cup sugar
- 1 cup water
- 3 peeled, cored and diced granny smith apples
- 3 8 ounce packages cream cheese (room temperature)
- 1 cup sugar
- 2 tablespoons flour
- 1 teaspoon vanilla
- Preheat oven to 375 degrees. Place graham crackers, butter and sugar in food processor until well combined. Press into bottom of 9 inch springform pan and cook for 10 minutes.
- Place cranberries, ginger, sugar and water into sauce pan. Bring to a boil stirring occasionally.
- Place cream cheese, sugar, flour and vanilla in blender and mix until smooth. Add apples and stir in by hand. Using a slotted spoon add cranberries to mixture and stir until combined. Pour over prepared crust. Bake for 40-45 minutes or until center is just set. Cool completely and keep refrigerated.
