Chicken Broccoli Casserole
- 1 chicken breast (with skin)
- 1 c. rice
- 1 small pkg. Velveeta
- 1 medium onion, chopped
- 1/3 bell pepper, chopped
- 1/2 c. celery, chopped
- 1 pkg. frozen broccoli, chopped
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic salt
- 1/2 stick butter
- 1 can cream of mushroom soup
- 1 small can evaporated milk
- Cook chicken until done.
- Take out of pan to cool, reserving broth.
- On low heat, add rice, bell pepper, onion, celery and butter to broth.
- Let cook until done.
- Remove from heat and add broccoli, diced chicken, salt, pepper, garlic salt, soup and milk. Stir gently and place in large casserole dish.
- Place sliced Velveeta on top and bake at 375u0b0 for about 30 minutes.
