Artichoke And Feta Summer Salad
- 2 14oz cans Quarted Artichoke Hearts
- 3-4 medium sized Tomatoes- heirlooms are best
- 1 red pepper
- 1/2 red onion
- 3 ribs of celery
- 6oz of feta cheese
- 3 cloves of garlic, crushed and minced
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 tsp ground mustard
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp sugar
- 1 tsp italian seasoning
- 1. Open cans of artichokes and drain.
- 2. dice all vegtables, toss with artichokes and feta in a large bowl.
- 3. Combine garlic, vinegar, and spices in a small bowl. While wisking, slowly add oil in a steady stream. Mix until combined.
- 4. Pour dressing over salad and toss. Let sit for at least 1/2 hour.
