Pork Chops Mexicana
- 6 ribs or loin pork chops (3/4 to 1-inch thick)
- 1 tsp. salt
- 3/4 c. uncooked rice (not instant)
- 1/2 pkg. taco seasoning mix (1 1/2 to 2 1/2 Tbsp.)
- 1 (8 oz.) can tomato sauce
- 1 1/2 c. water
- 1/2 c. shredded cheese (Cheddar)
- 1 medium bell pepper, cut in 1/2-inch rings
- Brown chops in lard or drippings.
- Arrange in a 9 x 13 x 2-inch pan and season with salt.
- Sprinkle rice around chops. Combine taco mix, tomato sauce and water.
- Pour over chops and rice.
- Cover tightly with foil and bake at 350u0b0 for 1 to 1 1/4 hours (depending on thickness of chops).
- Remove from oven 10 minutes before done.
- Sprinkle with cheese and arrange green pepper slices over surface of chops and rice.
- Cover and continue baking.
