Smoky Bacon-Biscuit Dressing
- 2 cans store bought biscuits
- 1 lb. diced smoky bacon
- 1 cup yellow onion, diced
- 5 celery stalks, diced
- 8 oz. shiitake mushrooms, sliced
- 2 tbs. sage, chopped or 1 tbs. dry sage
- 2 tbs. thyme, chopped
- Salt and peper to taste
- 5 cups chicken stock
- Position rack in lower portion of oven and preheat oven to 350.
- Spread biscuits on baking sheet and cook according to package instructions. Set aside cooked biscuits until cool. Once cool cut biscuits into 1 inch pieces.
- Increase oven temperature to 375.
- In a saute pan over medium high heat, cook bacon until crisp. Drain cooked bacon on a paper towel and set aside. Add onion to saute pan with bacon drippings. Cook until onions are soft. Add celery, mushrooms, sage and thyme; cook until celery is soft. Transfer onion mixture to a large bowl. Add bacon to onion mixture; season with salt and pepper. Add biscuits and stock; stir to combine.
- Transfer dressing into a baking dish. Cover with foil; bake 30 minutes. Remove foil; bake until dressing is lightly browned about 20 minutes more.
