Cozy Meal
- A bundle of fresh carrots,a med cabbage,5 lbs of Red Potatoes.
- two slabs of Pork Ribs. Clean and marinated from the nite before in a little lemon and apple cider vinegars.. about half cup each.. and assorted spices, I preferred Italian spices, adobo, salt and pepper, garlic powder and onion powder.
- four strip of cilantros
- and one tablespoon of dill seeds.
- two bell peppers-slices
- two spanish onions-slices
- a few garlic cloves mince
- Big Pot of WATER
- First clean the slabs of pork and make sure to stripped off the back linning of the slab.
- Add all the spices and liq.. and cover and marinade over nite.
- Next day when ready to cook, you cut up the ribs in two bones per serving.
- In the biggest pot you have, you add water and starts to boil with the vegetables.
- Clean and shave the carrots and slice in half. cut up the cabbage into four sections after you wash and drain, peel the potatoes and add whole to the water. add onions and bell peppers slices up and salt and pepper.
- once the water is boiling, you add the pork ribs and cover and cook at med heat for about one hour, then lower it and cook slowly for another two hours.
- once it is cooked, (the ribs), you then can serve hot with the rest of the vegatables in a bowl with a little of the broth.
- Individual serving can add mustard or sour cream... eat with garlic bread on the side or buttered buns.
