Chicken Cacciatore
- Boneless chicken breasts
- 1 cup flour
- 1 med onion finely chopped.
- 2 large cloves garlic minced
- 1/4 cup olive oil
- 1/4 cup tomato paste
- 1/2 cup white wine
- 1 tsp salt
- 1/4 tsp pepper
- 3/4 cup chicken broth
- 1 bay leaf
- 1/8 tsp tyme
- 1/2 tsp basil
- 1/8 tsp marjoram
- 1/2 tsp oregano
- 2 tbsp chopped parsley
- parmesan reggiano cheese
- Dredge pices of chicken with flour and brown on med.high heat in olive oil.
- Set chicken aside when browned.
- Saute onions until soft, then add minced garlic for a minute.
- Add remaining ingredients except cheese.
- Simmer, covered for 1 to 2 hrs.
