Layered Enchilada Bake
- 1 # ground beef
- 1 onion
- 2 c taco bell thick n chunky salsa
- 1 can black beans drained, rinsed
- 1/4 c Italian Dressing
- 2 T Taco Bell taco seasoning mix
- 6 flour tortillas (8 in)
- 1 c sour cream
- 1 pkg shredded cheese
- Line 13x9 baking dish with foil, and up sides a little
- Brown meat with onions, drain
- add salsa , beans, dressing and chili powder, mix well
- arrange 3 tortillas in single layer on bottom of dish, cover with layers of half ea of the meat mixture, sour cream and cheese, repeat all layers, cover with foil
- bake at 400 for 30 min, remove foil, bake extra 10 min or until casserole is heated through and cheese is melted, let stand 5 min
- May cover with chopped tomatoes, shredded lettuce and chopped cilantro
- may make ahead of time and freeze, prior to adding tomato,lettuce
