Sweet Chili Charred Prawns
- FOR MARINADE:
- 2 tbsp olive oil
- 1 medium onion- finely chopped
- 2 cloves of garlic- crushed
- 3 red chili's- finely chopped and de-seeded
- 1 tbsp brown sugar
- 4 tbsp water
- 1 tbsp chopped thai basil
- 2 tsp red wine vinegar
- 2 tsp dried or fresh parsley
- salt and ground pepper
- 20-24 prawns or jumbo shrimp
- 2 large red and 2 orange bell peppers cut into rough squares
- 2 large onions cut into rough triangles
- juice of 1/2 a lemon
- in a shallow pan heat olive oil and add chili's, garlic and onion and fry till translucent (see-through) and tender.
- add only the basil and mix well for about 30 seconds. then add remaining ingredients and simmer till it becomes syrupy in consistency and sugar has completely dissolved.
- turn off heat and press through a seive.
- add the pasley to the marinade and wait until completely cool before mixing with prawns and setting aside for 10-15 mins.
- heat a gridle pan and brush the vegetables with oil and salt. make sure the pan is very hot before grilling them- takes about 1-2 mins on either side of vegetable. set them aside and start cooking your prawns the same way. 35-50 seconds on each side-- they should be firm, pink and moist. toss the veg and prawns together and add any remaining marinade over it. a good squeeze of lemon juice- and your ready to serve!
