Sweet Relish

  1. Place cucumbers, peppers, onions,in a bowl or crock. Sprinkle with turmeric. Dissolve 1/2 cup salt in 2-quarts of cold water. Let stand 1 hour. Drain well, cover with more cold water and let stand 1 hour. Drain well.
  2. Brine: place seasonings in bag and bring to simmer in the cider vinegar. Let rest for 3-4 hours. Remove bag and place over cucumber mixture. Mix in the 3 tablespoons of mustard seeds. Let all ingredient stand for 12-18 hours. Bring to boil, pack in pint jars and proses 10 minutes in a hot water bath.
