Sweet Relish
- 2-quarts graded cucumbers
- 2-cups shredded red sweet peppers
- 2-cups shredded green peppers
- 1-cup shredded onion
- 1-tablespoon turmeric
- Brine:
- 1 1/2 cups brown sugar
- 1-quart cider vinegar
- 1/2- cup salt
- Place in bag:
- 2-teaspoons whole pickling spice
- 2-teaspoons whole cloves
- 2-whole cinnamon sticks ( broken)
- Place in cucumber mixture:
- 3 tablespoons mustard seed
- Place cucumbers, peppers, onions,in a bowl or crock. Sprinkle with turmeric. Dissolve 1/2 cup salt in 2-quarts of cold water. Let stand 1 hour. Drain well, cover with more cold water and let stand 1 hour. Drain well.
- Brine: place seasonings in bag and bring to simmer in the cider vinegar. Let rest for 3-4 hours. Remove bag and place over cucumber mixture. Mix in the 3 tablespoons of mustard seeds. Let all ingredient stand for 12-18 hours. Bring to boil, pack in pint jars and proses 10 minutes in a hot water bath.
