Pasta And Bean Soup With Kale
- 11/2 beans (cranberry,kidney, navy) soak overnight
- 6 c chicken stock
- 2 cloves garlic crushed
- 1 tbsp herbs (rosemary,thyme , sage etc.)
- 2 tomatoes or 14.5 crushed tomatoe can
- 2cloosely packed white Italian or French bread crust removed
- 1 lg head tuskan kale rinsed de-stemmed and roughly cut
- Bag small pasta
- Salt pepper
- Parm cheese
- Put beans in lg pot add cold water to cover beans by at least 2" and soak 8 hrs drain and return to pot
- Add stock to cover beans, garlic and fresh herbs , bring to boil, lower heat and simmer 40-60mins
- Use a fork to mash together the tomatoes and bread pieces until a surrey is formed set aside
- Remove garlic and herbs from pot, and stir in bread mixture simmer with 2 c. More stock stirring occasionally for 20 mins approx.
- Add kale simmer, add slightlybcooked small pasta, adding water or broth if too thick
- Season salt and pepper and serve with parm cheese
