Pasta And Bean Soup With Kale

  1. Put beans in lg pot add cold water to cover beans by at least 2" and soak 8 hrs drain and return to pot
  2. Add stock to cover beans, garlic and fresh herbs , bring to boil, lower heat and simmer 40-60mins
  3. Use a fork to mash together the tomatoes and bread pieces until a surrey is formed set aside
  4. Remove garlic and herbs from pot, and stir in bread mixture simmer with 2 c. More stock stirring occasionally for 20 mins approx.
  5. Add kale simmer, add slightlybcooked small pasta, adding water or broth if too thick
  6. Season salt and pepper and serve with parm cheese
