Pineapple Fritters With Mango-Ginger Coulis
- Fritters
- 1/2 cup Panko Bread Crumbs
- 1/4 cup Graham Cracker Crumbs
- 1/2 teaspoon Cinnamon
- 8 ea. Pineapple Slices
- 2 Tablespoons Flour
- 1 ea. Egg beaten with 1 T water
- 3/4 cup Sugar
- Coulis
- 1 cup Mango-sliced
- 1/2 cup Sugar
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Ginger-minced
- Coulis
- Puree and Strain Mango with Ginger
- Add Sugar and Lemon Juice.
- Add more/less juice to gain correct consistency.
- Fritters
- Mix Panko, Graham crumbs, and cinnamon.
- Dip Pineappple slices into flour, then the eggs, and the Panko mixture.
- Fry in 350 degree oil until golden brown.
- Sprinkle with Sugar and serve with the Mango-Coulis
