Kale Salad
- 2-3 bunches or large bag kale
- (amount will vary depending on if it
- is baby kale - you will want more- or
- if you like less dressing)
- 2T vinegar ( your choice)
- 2T soy/Tamari
- 3 cloves finely chopped garlic ( or to taste)
- 3T Olive Oil
- 1/4C nutritional yeast flakes ( reduce by half if using powder)
- Chop Kale
- Mix all dressing ingredients together.
- Pour over Kale
- Massage in, if using hardier varieties.
- Toss, if using baby Kale
- If using baby Kale can be eaten immediately and will not last over to next day. Will wilt too much.
- If using hardier varieties massage in and let sit for a little while, depending on the Kale. But I have eaten within 10 minutes. It is great the next day and I have eaten it 3 days later. The longer it sits the better it is!
