Red Bean And Rice
- I large onion
- 1 red bell pepper
- 1 green bell pepper
- 2 cloves of garlic
- 1T olive oil
- 1 can of pinto beans (undrained)
- 1 cans of red kidney beans (undrained)
- Shredded cheddar cheese
- Lite kielbasa sausage or lite sausage
- 1 tsp. of thyme
- 1 T of basil
- 1/4 tsp of Natures Morton Seasoning
- salt and pepper to taste
- Brown rice (prepared according to package)
- Slice onion and peppers.
- Cut sausage into round-bite size pieces.
- Heat large pot on med-high heat. Add olive oil and heat through.
- Next add onion and peppers and season with salt and peppers. Cook about 5 minutes then add garlic. Once vegetables are tender and slightly translucent, add sausage. Continue cooking until onions become completely translucent.
- Add in spices and give a stir. Pour undrained pinto and kidney beans into the mix and bring to a boil. Reduce heat and simmer for about 10 minutes.
- Serve over prepared rice and sprinkle with cheese.
