Chicken And Asparagus
- 1 lb chicken breasts diced
- 1 bunch asparagus cut into 3 inch pieces
- 3 Roma tomatoes chopped
- 2 to 4 cloves garlic minced (depending on how much garlic you like)
- 2 Tbsp Olive Oil
- 1 Cup Whipping Cream
- 1/2 Cup White Wine
- 1/2 tsp White pepper
- dash Salt
- Parmesan cheese
- Fettucine
- Heat olive oil in large frying pan and saute the chicken until brown. Remove chicken from pan. Add garlic to hot pan and cook for about 2 minutes. Add white wine. Bring to a boil and reduce by about half. Add whipping cream and bring to boil. Add chicken back into sauce. Reduce heat and simmer for 10 minutes. Add tomatoes, white pepper and salt. Cook for an additional 5 minutes.
- While preparing sauce, cook fettucine. Quick cook asparagus so still crisp.
- Toss asparagus into sauce immediately before serving. Sprinkle plates with parmesan cheese.
