Hatch Green Chicken Chili
- 1.5 lbs. chicken breasts or thighs
- 2 2tbs. olive oil
- 1 cup onion, chopped
- 3 cloves garlic
- 4-5 whole Hatch chilis (can substitute 3 cans of Hatch chilis)
- 4 tbs. chipotle chili powder
- 3/4 tbs. cumin
- 1/2 tsp. salt
- 1 14 oz.can diced tomatoes
- 1 8 oz. can tomato sauce
- 2 cups chicken broth
- 1 15 oz. can Pinto beans
- Shredded cheese
- Green onions, chopped
- Trim fat from chicken and coat with 1 tsp of chili powder. Saute chicken in olive oil until done. Set aside and chop into 1/4-inch pieces after allowed to cool.
- Heat oil in large skillet or Dutch oven over medium high. Saute onion and then add garlic after onions have sauteed completely. Add spices,tomatoes,tomato sauce chicken broth and pinto beans. Stir until blended and add chicken. Reduce heat and simmer 20 minutes. Serve in bowls topped with cheddar cheese and chopped green onions.
