Cappelini Palermo
- 12 oz Chicken Breast, Cut Into 1"
- Cubes
- 2 oz Olive Oil
- 2 Tbl Garlic, Minced
- 4 Tbl Sun Dried tomatoes, Chopped
- 4 Tbl Scallions, Chopped
- 1 Tbl Parsley, Fresh, Chopped
- 2 tsp Basil, Fresh, Chopped
- 2 tsp Oregano, Fresh, Chopped
- 2 oz Marsala Wine
- 2 Tbl soy sauce
- 2 Tbl Butter
- Kosher Salt And Black Pepper, To Taste
- 16 oz Cappelini (Angel Hair),
- pre cooked (Cooked Al Dente)
- Sprig Of Basil, For Garnish
- Heat olive oil over medium high heat and saute chicken breast; add garlic, scallions and sun-dried tomatoes. Deglaze pan with marsala wine; add soy sauce
- and fresh herbs. Let simmer; add butter and allow to simmer until slightly thickened. Pour over pasta and serve
- immediately. Garnish with a sprig of basil.
