Not Your Kid'S Campbells!
- 2 cans Italian style seasoned stewed tomatoes
- 1 quart or equivalent canned, crushed tomatoes
- 3 leeks, white and tender green
- 2 cloves chopped garlic
- fresh basil leaves, chopped
- salt & pepper
- 2 T olive oil
- 1 can chicken stock
- 1 cup heavy cream
- Sour Cream for garnish
- thinly slice leaks
- Saute in olive oil with garlic until tender
- Add tomatoes and cook over medium heat, stirring frequently, until they soften
- Take about 2/3 of tomato-leek mixture and process in food processor, then return to pot
- Add chicken stock, fresh basil, salt & pepper
- Return to medium high heat and cook stiring, until it begins to reduce.
- Lower heat, stir in cream. Simmer until heated through
- Serve with a dollop of Sour Cream. Serves 6 - 8
