Not Your Kid'S Campbells!

  1. thinly slice leaks
  2. Saute in olive oil with garlic until tender
  3. Add tomatoes and cook over medium heat, stirring frequently, until they soften
  4. Take about 2/3 of tomato-leek mixture and process in food processor, then return to pot
  5. Add chicken stock, fresh basil, salt & pepper
  6. Return to medium high heat and cook stiring, until it begins to reduce.
  7. Lower heat, stir in cream. Simmer until heated through
  8. Serve with a dollop of Sour Cream. Serves 6 - 8
