Roasted Garlic Ricotta Dip

  1. Heat oven to 375 degrees
  2. ROAST GARLIC
  3. Cut the garlic head a third of the way down to expose the cloves.
  4. Drizzle the open end with olive oil.
  5. Wrap in aluminum foil and place on a cookie sheet.
  6. Roast in the oven for 45-60 minutes.
  7. Once the garlic is roasted, removed from the oven to cool.
  8. When it's cool enough to handle, you can either squeeze the garlic out or removed each individual clove.
  9. MAKE DIP
  10. In a medium sized mixing bowl, mash the garlic cloves until a paste is formed,
  11. Add in ricotta, asiago and olive oil and mix until combined.
  12. Salt and pepper to taste.
  13. Serve with cheesy bread or loaf of focaccia.
