Black Bean Lasagna
- 2-15oz.cans black beans
- 2-19oz.cans tomato sauce
- 1-green pepper(chopped)
- 1-yellow onion(chopped)
- 1-clove garlic (minced)
- 1-4oz. low fat sour cream
- 1-12oz.low fat cottage cheese
- 1-8oz.pkg.neufchatel cheese
- non-stick cooking spray
- 9 Lasagna noodles
- Drain and rinse beans.Mash one can and set other aside.Prepare noodles as directed on pkg., drain&lay flat. Spray large skillet with non-stick coating;add onion,pepper&garlic. Cook&stir until tender,not brown.Add mashed beans,unmashed beans,tomato sauce. Heat through
- In lge.bowl,combine cottage cheese,sour cream,cream cheese.
- Spray 3qt.rect.baking dish w/non-stick coating. Arrange 3 noodles,then one-third bean mixture, then spread one-third cheese mixture. Repeat twice,ending with bean mixture.
- Bake covered at 350degrees for 45min.or until heated through. Let stand 10 minutes.
