Fennel Crusted Salmon On The Grill
- 2 T salt
- 6 - 8oz. 3/4 inch thick salmon fillets
- 2 T black pepper
- 1 T sugar
- 3 small container fennel seed (.55 oz each)
- 2 Vidalia Onions
- Olive oil for basting onions
- 3/4 quart of heavy whipping cream
- 1/2 stick of butter
- Remove the skin from each side of the salmon.
- Mix the sugar, salt, pepper and fennel together and rub in to the salmon. Marinate the salmon for 4 - 8 hours. Finely slice 2 vadalia onions and baste with olive oil. Roast onions in 400 degree oven approx 15 - 20 minutes, turning occasionally, until just starting to brown. Reduce 3/4 quart of heavy whipping cream to less than half of the original amount. Add drained onions and 1/2 stick of butter. Season with salt and white pepper. Meanwhile, grill the salmon over HOT coals 3 minutes on each side. Ladle sauce in to plates and place salmon on top. Garnish with fresh fennel.
