Vegetarian Meatballs

  1. Preheat oven to 400 degrees. Mix ingredients (eggs through herbs) together until just combined. Form into balls of uniform size. Heat olive oil in an oven proof skillet over medium high heat. Brown meatballs on one side, about 5 minutes. Carefully turn all over and place skillet in the oven for 10 to 15 minutes until browned on the bottom and cooked through. Finish cooking in simmering sauce for 45 minutes if desired.
