Cool It Off Salad
- 1 Large Bowl full of fresh gourmet salad greens (Mesclun Mix with Ruby Orach Spinach is the best).
- 2 organic apples, diced or cut in sticks. Granny Smith or Gala apples are good.
- 1 mango, peeled, pitted and diced.
- 1 pound red grapes, washed and patted dry.
- 1 or 2 cups freshly cut Apple Mint, Pineapple Mint, and or English Mint.
- 1 or 2 cups freshly shredded Asiago cheese.
- 1/2 cup pine nuts (walnuts pieces or slivered almonds also good).
- 1 lime freshly squeezed.
- 1/4 cup balsamic vinegar ( I have fig aromatized that works extremely well).
- 1/4 cup olive oil (or for a sweeter taste, walnut oil or Almond oil).
- Whisk together the oil, vinegar, and lime. Salt and pepper to taste. Stir in the apples, mango and grapes. Toss fruit and dressing into greens and mint. Top with the Asiago cheese and nuts to serve.
