Spicy Cajun Noodles With Chicken
- 2 boneless skinless chicken breasts cubed
- 1 clove minced garlic
- 1 chopped onion
- 1 tsp oil
- 1 tbsp frank's red hot sauce
- 1 tbsp soya sauce
- 1 cup low sodium chicken broth
- 1 tsp cajun spice
- 3/4 cup each chopped carrots, celery
- 1 tsp corn starch dissolved in small amount of cold water or broth (a shot glass works well)

- Heat oil in a large skillet or wok over medium-high heat. Saute garlic and onion. Add chicken and cajun spice and cook for 3 minutes. Add veggies and cook until chicken is no longer pink.
- Add chicken broth, franks, and soya sauce. Simmer covered for 5 minutes. Add corn starch mixture and stir immediately!!! Sauce will thicken upon stirring.
- Toss in cooked chow mien noodles and fry for a minute or two (noodles will absorb sauce for more flavour) OR just serve mixture over chow mien noodles.
- For spicier sauce, add more cajun spice and franks. All measurements are approximate (I tend to be more generous with ingredients than what I listed above)
- *Pork, beef or shrimp can be substituted for chicken. Also try beef or vegetable broth. Beer can also be substituted for chicken broth. Try different veggies (water-chestnuts, bean sprouts, mini corn cobs, broccoli)
- **If you don't like onion, cut it up into big pieces and remove it before adding the broth.
