Beef Tenderloin Boursin
- 3 8 oz beef tenderloin
- 1 small white onion sliced
- 1/2 cup coca cola
- cracked black pepper
- boursin cheese
- 2 cups balsamic vinegar
- 2 tbsp red currant jam
- 1/2 cup brown sugar
- fingerling potatoes
- kosher salt
- 1/4 cup cilantro, chopped
- for the beef, grill to desired temperature.
- in a pan, saute the onion until translucent and add in coke. let reduce and continue to cook until onions are a deep brown in color.
- combine the balsamic vinegar, brown sugar and jam in a pan over medium heat. simmer until reduced to 1/2. set aside
- roast the fingerling potatoes on the grill and toss with the chopped cilantro and salt
- slice the beef in half and stuff with the caramelised onion and top with boursin cheese. using a torch or broiler, melt the cheese and serve with potatoes and your choice of vegetable.
