Habibi Turkish Coffee
- For each 2 servings:
- 2/3 cup cool water
- 1 scant teaspoon sugar
- 1 clove
- 1 smashed cardamom pod (crushed so the seeds are open to contact with water)
- 1 sliver of cinnamon (about 1/4 of an inch)
- 2 drops of rose flower water (or 1 drop of orange blossom if you like it sweeter)
- 1 heaping tablespoon good quality ground coffee
- In a metal pot (preerably choclate or turkish coffe) set water, sugar and flavorings and cook over medium low heat until the sugar melts and water is just about to break out into a rolling boil.
- Take off the heat and add coffee.
- Stir quickly and either:
- - pound bottom of coffe pot on counter (carefully) so the grounds settle (leaves lots of grounds but frothy top)
- - use a fine mesh stariner when pouring into cups (few grounds but no froth, my least favorite)
- - put in a french coffee press and serve "fusion style" (no grounds but acceptable froth)
