Artichoke Dip
- 1 (8 oz) packaged reduced-fat cream cheese
- 1/2 c. light hellmans mayonnaise (NOT FAT FREE/Low fat)
- 1/2 c. skim milk
- 1 oz grated parmesan cheese (1/4 c.)
- 1 garlic clove, minced
- 1 tsp. hot pepper sauce
- 1 (14 oz) can artichoke hearts, drained
- 1 tsp fresh lemon juice
- salt & fresh ground pepper
- Breton crackers (or pita chips)
- Blend cream cheese, mayo, milk, cheese, garlic, & hot pepper sauce in food processor until smooth. Add artichokes and pulse until well combined, but chunky.
- Transfer to a microwave-safe serving dish. Microwave on medium until heated through ~5minutes. (OR, heat in oven until bubbly) Stir in lemon juice & season to taste with salt & pepper. Serve with crackers.
