Mrs. Martinelli'S Chicken Casserole
- eqv of 1 roasted chicken, or 4-5 breasts cooked and cubed - seasoned to taste
- 2 cans Cream of mushroom soup (I like to use 1 mushroom and 1 crm of chicken)
- 2 boxes of Uncle Bens (or farmhouse) wild rice - cooked per instruction
- 2 cans sliced water chestnuts - chopped
- 2 cups shredded cheddar cheese (add more if you wish)
- 1-2 cups either crushed croutons, bread crumbs, or crushed corn flakes (for the topping)
- spices (to taste):
- curry powder
- cumin
- poultry seasoning
- salt and pepper
- (some people like to use mrs dash or whatever instead of salt.)
- In a large sauce pan, combine all ingredients except cheese and topping and heat trough. If you have prepared your own chicken, make sure you have seasoned it well during the cooking process or the casserole will be bland.
- Add cheese and mix together. Pour into a large casserole dish and top with your chosen topping. sometimes I will put just a little extra cheese on top with the crushed corn flakes.
- Bake at 350 for 30 min or until topping is golden brown. Remove from oven and enjoy!
- For a healthier version, use brown rice and wild rice, low sodium soups, and low fat cheese.
