Home Made Vegetable Soup
- 1/2 lb. ground beef (browned and drained) or 2 c. precooked turkey, chicken beef or pork chopped into small pieces
- 1 slice smoked bacon (optional)
- 1 c. onion, chopped
- 1 c. potatoes, diced
- 1 c. carrots, sliced
- 1 c. celery, sliced
- 2 (16 oz.) cans whole tomatoes, chopped
- 5 c. chicken, beef or turkey broth (or 5 c. water and 2 Tbsp. bouillon granules or 6 bouillon cubes)
- 1 can corn
- 1 can green beans
- 1 can peas
- salt and pepper to taste
- 1/4 tsp. thyme
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 1 or 2 whole bay leaf/leaves
- 1/2 c. elbow macaroni (optional)
- Simmer all at least 30 minutes.
- If you add macaroni add it now and cook for an additional 10 minutes.
