Cream Cheese Pumpkin Squares
- 1 15 oz. can pumpkin
- 2 large eggs, room temp.
- 8 oz. reduced calorie cream cheese (no fat free)
- 1/2 cp. splenda
- 1 tsp. ground cinnamon
- 1 box "Spice" flavored cake mix
- 1/2 butter melted
- 1/2 cup chopped pecans or walnuts
- 1 cup whipping cream, flavored with 1 tb. rum, or 1 ts. rum extract
- Preheat oven to 350 degrees.
- Put first five ingredients into mixing bowl and mix until well blended. Pour into a greased 8X13 cake pan.
- In a separate bowl,combine cake mix, melted butter, and nuts until you get a crumb like consistancy. Top the cream cheese mixtue with crumb mixture.
- Bake in oven for approximately 35-40 minutes or until topping is light brown in color. Remove from oven, and let sit until room temperature.
- Beat whipping cream and rum (or extract).
- Cut into serving size squares, and top with a dollop of whipped cream. Garnish with a sprinkle of fresh grated nutmeg. Enjoy!!
