East Meets West Bruschetta
- The Bread:
- 1 Stick of fresh French baguette
- 1/4 cup of butter, melted
- Bruschetta:
- 2 Medium cloves of garlic, minced or pressed
- 4 vine ripened tomatoes, sliced in half, seeds removed, then diced (roma tomatoes are also a good option since they have less juices)
- 3/4 Sweet white onion, diced
- 3/4 tbsp oregano
- 1/2 cup chopped fresh flat leaf parsley
- 1/2 cup chopped fresh cilantro
- 1/4 cup balsamic vinegar
- 1/4 cup of extra virgin olive oil
- Salt and pepper to taste (more salt is actually nice
- Preheat oven to 400F.
- Toss all the bruschetta ingredients together and let sit for about 30mins for flavours to soak in.
- Slice the baguette diagonally, approximately 1/2 inch thick then brush with melted butter. Toast the bread in oven until golden (about 5-7 mins - watch closely!)
- Top the baguette toasts with bruschetta and serve immediately.
