Cauliflower Steaks W/ Parsley Butter
- 2 Med heads cauliflower
- 1/2 c unsalted butter, room temp
- 2 T coarse sea salt
- 1 T fresh ground black pepper
- 2 lemons
- 1 T minced fresh parsley
- 1/2 c freshly grated Parmesan
- 2 T olive oil for grilling
- 1. Turn a gas grill to high. When grill is hot place a flat metal plate or cast iron skillet on the grill rack. Heat for 10 min.
- 2. Keep the core and stalk in place unter after you've sliced cauliflower. With knife, cut cauliflower in head lengthwise into 1/2-in thick slices. Cut away the stalk (just base of it) from the bottom of each slice.
- 3. Give ea. cauliflower steak a good smear of butter. Sprinkle w/ S & P.
- 4. Place steaks on the plate or pan and cook until they show a caramelized crust. (5-6 min).
- 5. While they cook, halve lemons and place cut side down on the plate and grill 2 min. Remove and set aside.
- 6. With a spatula, turn each stead and grill the other side until caramelized (abt 5 min). When golden brown, transfer to a serving platter, drizzle with juice from lemons, and garnish with parsley and Parm. Drizzle w/ olive oil and serve hot.
