Peanut Butter Caramel Corn

  1. Preheat oven to 200u0b0.
  2. Lightly oil a 9 x 13-inch baking pan with oil.
  3. Place popcorn in oiled pan and keep popcorn warm in oven while preparing peanut butter syrup.
  4. In a large saucepan, combine brown sugar, peanut butter, corn syrup, water, oil and salt.
  5. Bring to a boil, stirring frequently.
  6. Stir in baking soda and quickly pour syrup over popcorn.
  7. Gently stir until popcorn is well coated. Bake at 200u0b0 for 1 hour, stirring every 20 minutes.
  8. Remove from oven.
  9. Stir and let cool.
  10. Break into clusters.
  11. Store in airtight container.
  12. Makes 12 cups caramel corn.
