Peanut Butter Caramel Corn
- 3 qt. (12 c.) popped popcorn
- 1 c. light brown sugar
- 1/4 c. peanut butter
- 1/4 c. light corn syrup
- 1/4 c. water
- 2 Tbsp. oil
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- Preheat oven to 200u0b0.
- Lightly oil a 9 x 13-inch baking pan with oil.
- Place popcorn in oiled pan and keep popcorn warm in oven while preparing peanut butter syrup.
- In a large saucepan, combine brown sugar, peanut butter, corn syrup, water, oil and salt.
- Bring to a boil, stirring frequently.
- Stir in baking soda and quickly pour syrup over popcorn.
- Gently stir until popcorn is well coated. Bake at 200u0b0 for 1 hour, stirring every 20 minutes.
- Remove from oven.
- Stir and let cool.
- Break into clusters.
- Store in airtight container.
- Makes 12 cups caramel corn.
