Bbq Brisket And Cheddar Sandwiches
- 3 lb. beef brisket
- vegetable oil
- 1 onion, thinly sliced
- 1 cup ketchup
- 1/4 cup worcestershire sauce
- 2 tbs. brown sugar
- 2 tbs. cider vinegar
- 2 tsp. kosher salt
- 2 cups shredded sharp cheddar
- 8 hearty rolls
- In 1 tbs. oil, brown beef on both sides. Add onion and cook until they are golden.
- Combine the next 5 ingredients and pour over meat. In a dutch oven or heavy pan, simmer the meat, covered until tender, about 3 hours. Cool.
- Slice the meat against the grain. Wrap the meat separately from the sauce. To serve, heat the sauce in a small saucepan. Warm the beef on the grill in aluminum foil. Slice rolls and lightly toast on the grill, inside down. Cover with meat and 1/4 cup cheese. Heat until cheese melts.
