Chinese Cole Slaw

  1. Dressing:
  2. Mix together oil, sugar, vinegar & soy sauce. Refrigerate.
  3. Slaw:
  4. Toss together scallions, green and red cabbage.
  5. Crunchies:
  6. Break up Raman noodles, fry slivered almonds & noodles in butter until browned. You can do this ahead of time.
  7. Mix dressing, slaw and crunchies when ready to serve.
  8. Instead of frying the crunchies you can spray a cookie sheet with olive oil and bake them.
