Chinese Cole Slaw
- Dressing:
- 1/2 c. veg or olive oil
- 1/2 c. sugar (splenda)
- 1/4 c. vinegar
- 2 tbsp. soy sauce
- Slaw:
- 5 scallions chopped
- 1 bag shredded green cabbage with carrots
- 1 bag red cabbage
- Crunchies:
- 1/4 c. butter or marg.
- 3/4 to 1 cup slivered almonds
- 1 pkg. Raman noodles (remove flavor packet.)
- Dressing:
- Mix together oil, sugar, vinegar & soy sauce. Refrigerate.
- Slaw:
- Toss together scallions, green and red cabbage.
- Crunchies:
- Break up Raman noodles, fry slivered almonds & noodles in butter until browned. You can do this ahead of time.
- Mix dressing, slaw and crunchies when ready to serve.
- Instead of frying the crunchies you can spray a cookie sheet with olive oil and bake them.
