Roasted Cherry Tomato Salad Dressing
- Cherry tomatoes (about a pint)
- Fresh basil
- Fresh oregano
- 1-2 cloves of garlic
- olive oil
- salt
- pepper
- balsalmic vinegar
- Preheat oven to 400 degrees (I use a toaster oven)
- In an oven-proof bowl place rinsed basil & oregano and garlic cloves
- Place cherry tomatoes on top of herbs
- Sprinkle salt and pepper, drizzle olive oil over tomatoes
- Bake at 400 degrees for about 15-20 min, checking to make sure tomatoes are roasting. Its ok & preferable for them to get slightly charred and/or pop open. The juices from the tomatoes and the oil should keep the herbs in the bottom from burning.
- Remove from oven, drizzle balsalmic vinegar over.
- Let cool to warm
- Process in small food chopper till pureed.
- Pour into a clean lidded bottle and refridgerate.
- Will keep about 1 week refridgerated.
